With Valentine's Day just around the corner I am coming up with a four part series to bring you simple and easy cookies any Valentine will love to receive.


This delightful treat is a double whammy. It's a match made in heaven. If you are a peanut butter and chocolate lover like me, this ones for you.


Bite into a soft and chewy cookie that is crafted to perfection in a muffin tin, ensuring they maintain a uniform shape with a slightly crispy exterior and a tender, gooey center. The addition of Reese's Peanut Butter Cups takes these cookies to a whole new level. Placed in the center of each cookie, the miniature Reese's cups melt slightly, creating a delightful contrast to the chewy cookie base.


The sweet scent of peanut butter and chocolate will fill the air in your kitchen.

Peanut Butter Reese's Cup Cookie


Ingredients


  • ½ cup (1 stick) salted butter, cold or room temperature

  • ½ cup packed brown sugar

  • ¼ cup granulated sugar

  • 1 large egg

  • ¼ cup creamy peanut butter

  • ½ teaspoon pure vanilla extract

  • ¼ teaspoon salt

  • ½ teaspoon baking soda

  • 1 3/4 cup all-purpose flour

  • 24 Reeses miniature cups, not minis unwrapped

  • Jumbo heart sprinkles (optional)


Directions


  1. Preheat your oven to 350°F. Grease a miniature muffin tin.

  2. In a mixer, cream butter, brown sugar and granulated sugar together until fully incorporated. Combine the egg, creamy peanut butter, vanilla extract, salt, and mix well. Add flour and baking soda and mix until the ingredients are well combined and form a smooth dough.

  3. Take tablespoon-sized portions of the dough and roll them into balls.

  4. Place each dough ball into the muffin tin cups.

  5. Bake in the preheated oven for 8-10 minutes or until the edges are set and golden brown.

  6. While the cookies are baking, unwrap the Reese's Peanut Butter Cups.

  7. As soon as the cookies come out of the oven, press one Reese's Peanut Butter Cup into the center of each cookie, allowing the cookie to mold around the candy.

  8. Let the cookies cool in the muffin tin for about 10 minutes,

  9. Here is where you can choose to add one jumbo heart sprinkle to the top of the Reese's cup. You won't need to press down too much because the sprinkle will stick to the melted chocolate.

  10. Then transfer them to a wire rack to cool completely.

Makes 24 mini cookie cups
